In order to cope with herring quickly, we reveal a few secrets that will help you do it quickly and easily:
- Rinse the herring well. Cover the cutting board with a plastic bag (this will help avoid the smell and long lasting washing).
- Put the herring on a board and cut the head. Use scissors or a sharp knife to cut the fish from head to tail. Discard the guts and wipe the inside with paper towels. These towels are very convenient to remove the black film that gives bitterness.
- To remove the skin, make a lengthwise cut along the spine from head to tail. Cut the fins off and gently peel on both sides, also in the direction from head to tail.
- Then take the halves of the tail and pull the fish in different directions, dividing it in half. Thus, the bones with the spine remain only on one half of the fillet. It should also be carefully separated from the spine, pulling to the side.
- Cut the tips of the tail off and the herring fillet is ready for further consumption.
